One of the most common things I get messages and questions about on Instagram is healthy snacks or meals that I post! So I wanted to do a round up of some of my favorite EASY eats that I keep on heavy rotation.
I have talked about my protein pancakes AT LENGTH over the past few years.
I love them. They are heaven on earth.
(They were even better before Tone It Up changed their protein powder and stopped making Perfect Fit and now only makes the other kind….. but I digress….. I have adjusted.)
I recently decided to try them in a waffle maker and I’m so mad I didn’t think of it sooner! In about 5 minutes you have TWO perfectly cooked waffles ready to go! It’s so much faster than making a batch of pancakes!
- 2 Eggs
- One single serving container Unsweetened Organic Applesauce
- 1 teaspoon baking soda
- 1 Scoop Vanilla Protein Powder (I use Tone It Up)
- Mix eggs and applesauce.
- Add in baking soda and protein powder and mix.
- Pour into waffle maker or make individual pancakes.
- (Makes a batch of Pancakes or 2 Waffles)
- Top with syrup, fresh fruit, chocolate chips cream cheese, anything you like!

I kept seeing “everything waffles” on some of the instagram accounts that I follow for F Factor diet snacks and meals. (F Factor is a high fiber diet that introduced me to GG crackers, but I don’t follow the diet other than incorporating a ton more fiber wherever I can.)
I am in love with my GG crackers, but alone they taste like cardboard. So I wasn’t interested in messing with my *perfect* protein pancake/waffle recipe and incorporating GG. Instead I just incorporated the idea of Greek Cream Cheese and Everything But the Bagel Seasoning for a savory waffle. Sometimes you aren’t craving sweet for breakfast or you don’t want all of the sugar from topping your waffles with syrup, so creating an everything bagel inspired waffle sounded so delicious! And it is! (If I’m not craving Chick-fil-A on Sunday, I’m raving a giant carby bagel with cream cheese!)
Greek Cream Cheese is just like regular cream cheese in taste except it has TWO times the protein and HALF the amount of fat. Win, win if you ask me! (I have not been able to find it at Whole Foods, Publix, or Trader Joe’s, but I did find it at Kroger of all places for local girls)
And if you don’t have Everything But the Bagel Seasoning from TJ’s in your kitchen yet, you need to get on it! I travel with this stuff I love it so much. (Yes… in my suitcase. And I am devastated when I forget to pack it!) It is perfect on eggs, avocado, toast, anything!
Here are a few more easy healthy eats that take less than 5 minutes to whip together!

Each cracker has 4g Fiber and while they taste bad alone, with toppings they are great and perfect to hold you over between meals!
I order mine on Amazon – and I have now resorted to buying them in bulk….. as in, a box of 30 that lasts me weeks!
Get ready for my infamously AMAZING food photography…… exciting things ahead.
I love making avocado toast with GG crackers. I’ll mash avocado with lemon juice and sea salt and top it with crushed red pepper flakes.
I’ll also top the GG’s with greek cream cheese and the everything but the bagel seasoning for a quick snack.
My favorite for easy lunches and dinners is Trader Joe’s Cauliflower Stir Fry. I never get sick of it. You can top it with any protein and add sesame oil or soy sauce. I love it with just a bunch of siracha too.
Occasionally I top it with chicken, but most nights I top it with a Dr. Praeger’s Black Bean Burger. It’s so filling and yummy. I try to smash up 2 GG crackers to add to this too for the added fiber to keep me full.
A new-to-me Trader Joe’s favorite are these Thai Vegetable Gyoza. They may not be the healthiest, but they are delicious, easy to pan fry quickly, and fairly healthy?!
Crackers or cucumber with Tzaziki is delicious and a healthier option than hummus. My husband can eat an entire tub of Sabra hummus while I make dinner so this is a lighter option to put out!
And one of my all time go-to favorites is yogurt with fruit and granola. I will make this with Bran Buds or a Fiber Cereal instead of granola to up the fiber and decrease the carbs and sugar.
and don’t forget about my favorite GG Pizza’s.
These are a great snack or dinner with a big salad. I love them!
