When life gives you twins that won’t eat any of the food you make them,
take the ripe bananas and make banana bread!
Someone that I follow (can’t remember who now!) posted a swipe up link to this banana bread recipe, and the next day when I saw the bananas on the counter on the verge of needing to be tossed I went and looked up the recipe.
And I am SO SO glad I did!

I luckily had *almost* all of the ingredients on hand and it turned out perfectly.
(I didn’t have any milk or almond milk, so I used 1/3 of a cup of half and half for the milk part – maybe it made it even better? but it definitely still worked!
I also was out of regular flour so used gluten free flour)
I did have to cook it for longer than an hour to get the knife to come out clean…. an extra 10-15 minutes.
Chocolate chips optional, but of course I always think that’s an option you should say YES to.
I don’t like nuts in my banana bread, but that would be a great addition too!
- 3 ripe bananas
- 2 eggs
- 1 c granulated sugar
- ½ c light brown sugar
- 1 stick butter (softened)
- ⅓ c milk, I prefer almond milk
- 1 tsp. vanilla (I usually use a little more since I love vanilla)
- ¼ c greek yogurt, you can sub sour cream
- 1 tsp. cinnamon
- 1 tsp. baking soda
- ½ tsp. salt
- 1¾ c flour
- Preheat oven to 350 degrees F.
- Place the softened butter in a mixer and add the sugar. Mix until combined and smooth.
- One at a time, add in the eggs. Once the eggs are incorporated, add the cinnamon, vanilla, sour cream, buttermilk, baking soda, and salt.
- Smash the bananas in a large bowl with a fork. Add to the wet mixture and combine. Stir in the flour until it is just incorporated. You do not want to over mix here or the bread will come out tough.
- Pour into a greased loaf pan and bake for about 1 hour or until a toothpick comes out smooth (I usually have to do 10 minutes more).
- I like to serve mine warm with a dap of butter on top but it's good eaten any way! Sometimes I even make Banana Bread French Toast out of the leftovers... mmm it is delicious!
I like mine popped in the microwave for a few seconds with a dab of butter, too 🙂
