We had a great weekend filled with Mexican food – so no complaints here!
I went to Superica Friday and then Chido and Padres Saturday, both were delicious as always!

We did some more car shopping on Saturday and I test drove the Acura RDX.
I think we have narrowed it down to the Ford Edge or the Acura RDX….. now we’ll just see when I actually pull the trigger!
I’m happy to hear any opinions on these two cars if you have one!

I’ve kicked off July by wearing tons of blue + white already.
These ginger jar earrings are such a fun statement earring.  They are heavier so I think I’m going to get some type of earring support sticker thingy majiggy to help!

Kip had requested homemade chicken salad, so in an attempt to make it a bit healthier I picked up this Primal Kitchen Foods Avocado Oil Mayo.  Now, does it taste like Hellmans? No.  Nothing tastes like Hellmans but Hellmans.   BUT was it delicious, YES.  I didn’t tell Kip and he didn’t even notice!

I kind of just made up a simple chicken salad recipe, but I used the following:

• shredded chicken from the slow cooker
  (cover chicken breasts with chicken stock, cook on low for 6-8 hours)
• Primal Kitchen Avocado Mayo
• Dijon Mustard
• Diced Celery
• Diced Red Onion
• Juice of one Lemon
• Salt
• Pepper
• Parsley

I started The Wife Between Us and I am LOVING it!

We are headed up to Chicago for a few days to see Kip’s family, hopefully squeeze in some friend time, and then we head to Michigan to hang at the lake for a few days! It should be a fun holiday week!
