It was a quick week which is always nice after getting back from a weekend away.
We don’t have anything crazy planned so it’ll be nice to relax!
I finally tried a new recipe this week and couldn’t have loved it more!
I made Greek Turkey Burgers that I saw on Natalie’s blog, but made them into meatballs instead!
They were a huge hit and I know they’ll become a regular dinner at our house because they were so easy to make.
A few changes to the recipe that I made, other than making them into meatballs :
– I used fresh spinach, cooked it down, and then cut it into tiny pieces. I can never can the water out of frozen spinach so this was easier for me.
– I subbed Panko for breadcrumbs – I always do this with meatball recipes. I think you could do without it too!
I served them with a Cauliflower Rice Greek Salad to make it a healthy low-carb dinner.
The original recipe called for cauliflower florets, but I had the caufliflower rice on hand so did that instead. I made another batch with cauliflower florets the next night because I had so much extra dressing.
Here is a link to the Cauliflower Salad, but I just used my own combination of ingredients and didn’t measure any of them.
- 1Â medium head of caulilflower
- 1Â medium sized English cucumber
- 1/2 pint grape tomatoes
- 10Â black olives pitted
- 1/4 large red onion diced
- 4 ounces crumbled feta cheese
I used 2 bags of riced cauliflower the first time and then just added the tomatoes, cucumbers, red onion, and feta as needed. (I don’t eat black olives but it would definitely add lots of flavor if you do!)
The dressing is SO yummy. It’s worth making alone!
- Dressing
- ½ cup Olive Oil
- ½ cup apple cider vinegar
- 1 lemon juiced
- 1 tablespoons dijon mustard
- ½ tsp dried oregano
- ½ tsp dried basil
- 3 cloves garlic finely chopped
- salt and pepper to taste
- In a small mixing bowl, combine all dressing ingredients. Whisk well. Can stay in fridge for up to 5 days.

Zara can be ver hit or miss in store, but online they have SO many great inexpensive pieces. I have been loving floral prints for summer, but I liked that this dress was something different. The vibe is kinda vintage and the print is so unique!
