If you follow me on instagram, you likely have seen me rave about my Instant Pot. (sorry, not sorry.)
It sat in the box for an entire year before I finally opened it, and I kick myself for it because it has made making meals SO easy. (And I’m as lazy as it gets when it comes to meal time. My husband has certainly not raving about my homemade meals at dinner time these days.)
The only thing that could make cooking dinner easier would be not having to grocery shop for any meals or do any of the prep work…..and hallelujah! I have found the answer!

My favorite meal I have made, especially because it’s something I don’t think I would ever attempt to make on my own at home, was the Lemon Herb Shrimp Risotto with Asparagus & Mushrooms. It felt like I was having dinner at a restaurant (which I so desperately wish I was doing far too often these days). Risotto requires so much time over the stove, so I have never make it at home. This gave me perfect risotto without a moment of babysitting it! And the sauce is what really knocked it out of the park for me. My husband agreed this was his favorite, too. I can’t recommend it enough.
Another great dinner was the Asian Style Pork + RiceNoodle Bowls.
My husband loves Asian food and I love anything with noodles so it was a win, win.
This one is ready SO fast too.
